Ingredients:

  • 1 cup whole wheat flour (atta)
  • 1/4 cup besan (gram flour)
  • 1/4 cup fresh fenugreek leaves (methi), finely chopped
  • 1/4 cup curd (yogurt)
  • 1 tablespoon oil
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • 1 tablespoon sesame seeds (optional)
  • Water, as needed
  • Ghee or oil for cooking

Instructions:

  1. In a large mixing bowl, combine the whole wheat flour, besan, chopped fenugreek leaves, curd, oil, turmeric powder, red chili powder, coriander powder, cumin powder, salt, and sesame seeds (if using).
  2. Mix well and knead the ingredients into a soft dough. If needed, add water gradually to achieve the right consistency.
  3. Divide the dough into small, equal-sized portions and roll them into balls.
  4. Heat a tawa or griddle over medium heat.
  5. Take one dough ball, dust it with some flour, and roll it out into a thin, round thepla.
  6. Place the rolled thepla on the hot tawa and cook until small bubbles start to appear on the surface.
  7. Flip the thepla and cook the other side until light brown spots appear.
  8. Apply ghee or oil on both sides and cook until the thepla is cooked through and has golden brown spots.
  9. Repeat the process with the remaining dough balls.
  10. Serve the Methi Thepla hot with yogurt, pickle, or any side of your choice.
